Meat and fruit is the perfect combination when it comes to salads so why not try this mouth-watering fresh mango and pancetta salad, a perfect meal for the whole family.
- 1 Mango
- 200 g Pancetta
- 1 lettuce
- 50 g Pine nuts
- 8 tablespoons Cherry tomatoes
- ½ Cucumber
- 120 g Halloumi
- 2 tablespoons extra virgin olive oil
- 1 tablespoon Balsamic vinegar
- Salt & pepper (to taste)
Arrange lettuce leaves on a plate.
Drop in cherry tomatoes, mango and cucumber all over the lettuce. Set it aside.
Fry pacetta until golden. Spread over the salad.
Add toasted pine nuts on top.
Grill halaoumi cheese and arrange over the salad.
Whisk olive oil with balsamic vinegar and derizzle over the salad.
