Amazingly fresh with a fish recipe or BBQ meats, this is a new twist that is healthier than a basic slaw. The Cucumber Slaw is easy and fast to make.
Ingredients (for 6 persons)
- 2 cucumbers – quartered, seeded, and thinly sliced
- 2 carrots, shredded
- 1/4 onion, grated
- 2 tablespoons white sugar
- 1 1/2 teaspoons ground coriander
- 1 teaspoon kosher salt
- 1/2 teaspoon coarse ground black pepper
- 1/4 cup apple cider vinegar
(Preparation time: 10 mins)
Using a vegetable peeler, cut cucumbers into ribbons. Place cucumber, onion and dill in a bowl.
Whisk oil, vinegar, fennel seeds and garlic together in a bowl. Season with salt and pepper. Pour over cucumber mixture. Toss to combine. Serve.
