Inside Cooking Ep 86: Beef and Quinoa Meatballs

Beef and Quinoa Meatballs are such an easy picky eater pleaser. They are a perfect school lunch idea or can be mixed with some fresh marinara sauce and be a lovely dressing for a portion of pasta. The meatballs are super easy to prepare and freeze perfectly.

Ingredients (for 12 servings)

  • 16 oz. Organic ground beef 500gr.
  • 3 cups cooked quinoa 900gr.
  • 1 large Fuji apple grated
  • 2 tablespoons tomato paste no salt
  • 2 tablespoon paprika
  • 1 tablespoon cumin
  • 1 egg
  • 3 tablespoons Extra Virgin Olive Oil

Instructions

(Preparation time: 20 mins; cooking time: 35 mins)

STEP 1

Preheat the oven at 350F/180C.

STEP 2

Place all the ingredients in a big bowl in the sequence you prefer. Mix everything.

STEP 3

Place one tablespoon of mix in your hands and roll it forming a small ball.

STEP 4

Place the meatballs on a parchment paper on a baking sheet. Drizzle some Extra Virgin Olive Oil on top of the meatballs.

STEP 5

Bake for 30 minutes. Enjoy!
